Update the target staff member’s profile fields. Every parameter is optional but at least one must be provided; omitted fields keep their current values. employee_id is identity and cannot change here. A call whose values all match the current profile is an idempotent no-op (connector re-loads retry safely without version churn). Emits staff.profile_updated.

Effects: modify hospitality.staff_member.
